Servings
Ingredients
- 1–2 bunches red radishes
- 1–2 tbsp olive oil
- 1/4 cup butter, divided
- 8 ounces phyllo dough
- 1 red onion, chopped
- 2 tablespoons dry sherry wine
- 2 large eggs
- 1 yolk
- 3/4 cup heavy cream
- 4 ounces fresh goat cheese
- 3/4 cup broken walnut pieces
- 1/3 cup fresh Italian parsley
Instructions
- 1Preheat oven to 350°F (347°F).
- 2Wash the radishes, discard the tops, place them in a small baking dish, drizzle with olive oil, and bake for about an hour; let them cool and cut into small cubes.
- 3Grease a pie pan with half the butter and line it with phyllo dough, covering the pan evenly and tucking any stray bits under to make a nice edge.
- 4Heat the remaining butter in a large pan, sauté the chopped onion for about 5 minutes, add the dry sherry wine and the diced radishes, cook for another minute, then remove from heat and pour the mixture into the pastry shell.
- 5In a bowl, whisk the eggs and yolk with the heavy cream, then pour over the vegetables in the crust and crumble the fresh goat cheese on top.
- 6Bake the pie in the preheated oven for 20 minutes, then add the broken walnut pieces and bake for another 15–20 minutes.
- 7Remove the pie, top it with chopped fresh Italian parsley, and let it cool completely before serving.
