20 minutes to prep, 12 to cook. These soft, chewy pumpkin oatmeal cream pie cookies combine warm autumn spices with a fluffy maple‑marshmallow frosting. The pumpkin puree keeps them moist while the oat‑infused dough adds a hearty texture. Perfect for fall gatherings or a cozy night in, they’re a delightful twist on classic sandwich cookies.

Method

  1. 1

Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

  2. 2

Stir in the pumpkin puree, which acts as flavor, moisture, and a binder.

  3. 3

Add the flour, rolled oats, and the spice blend (cinnamon, ginger, nutmeg, and cloves) and mix until just combined.

  4. 4

Preheat the oven to 350°F (350°F).

  5. 5

Scoop the dough onto a baking sheet, then use a large circular cookie cutter to swirl each cookie into a perfect round shape.

  6. 6

Bake for 10‑12 minutes, or until the edges are set but the centers remain soft.

  7. 7

Allow the cookies to cool completely on a wire rack.

  8. 8

While the cookies cool, make the maple marshmallow frosting by beating together powdered sugar, marshmallow fluff, softened butter, vanilla extract, and maple extract until smooth and fluffy.

  9. 9

Transfer the frosting to a piping bag and pipe generous dollops onto half of the cooled cookies.

  10. 10

Top with the remaining cookies to create sandwich cream pies and enjoy.

Tips while you cook

Cool before frosting
Allow the baked cookies to cool completely on a wire rack before applying the frosting.
Watch edge set, center soft
Bake until the edges are set but the centers remain soft for the ideal texture.
Pipe frosting onto half only
Pipe the maple marshmallow frosting onto half of the cooled cookies, then sandwich with the remaining cookies.
