20 minutes to prep, 50 to cook. A super‑moist spiced pumpkin coffee cake layered with a buttery brown‑sugar‑cinnamon streusel and finished with a sweet maple glaze. The warm spices and pumpkin give it a cozy, autumnal flavor, while the glaze adds a glossy, caramel‑like finish, making it perfect for brunch or an indulgent dessert.

Method
Prepare the streusel topping: combine softened butter, brown sugar, all‑purpose flour, cinnamon, and salt in a stand mixer; mix until crumbly and set aside.
In a large bowl, whisk together all‑purpose flour, sugar, baking soda, baking powder, a pinch of salt, cinnamon, nutmeg, and ground cloves.
Add pumpkin puree, vegetable oil, the two eggs, a splash of milk, and vanilla extract to the dry ingredients; stir just until the batter is combined, being careful not to over‑mix.
Fold the prepared streusel topping into the batter, reserving a small amount to sprinkle on top of the cake before baking.
Grease a baking pan, pour the batter in, and smooth the surface. Bake at 350°F (350°F) for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for about 10 minutes, then drizzle the warm maple glaze (simply maple syrup) over the top for a glossy finish.
