- 2 1/5 lb mutton
- 1 medium onion

- 0.33 cup curd (plain yogurt)
- 1 tsp ginger
- 1 1/2 tsp garlic
- 2 whole garlic bulbs
- 1 1/2 tsp coriander powder
- 1 tsp cumin powder
- as per taste salt
- 1 tsp turmeric
- 0.33 cup oil from frying beresta
Tadka
- 1 fl oz mustard oil
- 1 medium onion
- 8 pcs garlic
- 2 pcs red chillies
Instructions

In a large bowl combine the mutton, sliced onion, sliced beresta, curd, ginger, garlic, optional whole garlic bulbs, coriander powder, cumin powder, salt, turmeric, and the oil obtained from frying the beresta. Mix thoroughly, cover, and refrigerate for at least 4 hours or overnight to allow the flavors to meld.
- 22. Heat 20 ml of mustard oil in a heavy‑bottomed pan over medium heat. Add the whole spices – cloves, green cardamom, black cardamom, javitri, kabab chini, dry red chillies, and bay leaves – and sauté for about 30 seconds until fragrant.
