Method
Choux Pastry
Heat the milk, water, butter and salt in a saucepan over medium heat until boiling.
Add the flour all at once, stir until a smooth dough forms, then dry the dough over low heat while stirring.
Transfer the dough to a mixer, run the paddle to release steam, and add the eggs one by one until the batter reaches a thick ribbon consistency.
Pipe the choux onto a baking sheet, making larger bases and smaller tops.
Craquelin
Melt the butter, then mix in the brown sugar and flour until a crumbly dough forms.
Roll the craquelin thinly between two sheets of parchment paper, cut circles the size of the choux, and freeze until hard.
Puff Pastry
Roll the puff pastry between two sheets of parchment paper with a weight on top to keep it flat.
Bake according to package instructions, then cut circles the same diameter as the choux.
Vanilla Diplomate Cream
Heat the whole milk with the vanilla bean and seeds until just simmering.
Whisk egg yolks, sugar and cornstarch together, then temper with the hot milk.
Cook over medium heat until thickened, then add softened gelatin sheets.
Cool the pastry cream in the refrigerator for several hours.
Fold in the very cold heavy cream to create a light diplomate cream.
Main method
Choux pastry: Heat the milk, water, butter and salt in a saucepan over medium heat until it reaches a rolling boil.
Add the flour all at once, stirring vigorously until a smooth dough forms, then continue cooking over low heat, stirring constantly, until the dough dries and pulls away from the pan.
Transfer the dough to a stand‑mixing bowl, attach the paddle attachment and mix on medium speed to release steam; add the eggs one by one, mixing after each addition until the batter forms a thick, glossy ribbon consistency.
Pipe the choux onto a parchment‑lined baking sheet, shaping each piece with a larger base and a smaller top.
Craquelin: Melt the salted butter in a small saucepan, then stir in the brown sugar and flour until a crumbly, sandy dough forms.
Roll the craquelin dough thinly between two sheets of parchment paper, cut circles the size of the choux, and place the circles on a tray to freeze until firm.
Preheat the oven to 350°F (338°F). Place a frozen craquelin circle on each piped choux and bake for about 30 minutes, keeping the oven door closed for the entire time.
Puff pastry: If using store‑bought pastry, roll it between two sheets of parchment paper with a weight on top to keep it flat, then bake according to the package instructions. Once baked, cut the pastry into circles matching the diameter of the choux.
Vanilla diplomate cream: Heat the whole milk together with the split vanilla bean and its scraped seeds in a saucepan until just simmering.
In a separate bowl, whisk the egg yolks, sugar and cornstarch together until smooth, then slowly whisk in a small amount of the hot milk to temper the mixture.
Return the tempered mixture to the saucepan and cook over medium heat, stirring constantly, until the cream thickens and coats the back of a spoon; remove from heat and stir in the softened gelatin sheets.
Transfer the pastry cream to a shallow container, cover, and refrigerate for several hours until fully set and cold.
Fold the very cold heavy cream into the chilled pastry cream until light and airy, creating a smooth diplomate cream.
Assemble: Fill each baked choux with the vanilla diplomate cream, top with a puff‑pastry circle, and serve immediately.
