Method
Preheat the oven to 350°F (350°F).
Remove any giblets, rinse the chicken inside and out, and pat dry.
Scrape out any dark tissue from the cavity, then rinse again.
Season the cavity with a pinch of salt and pepper, then stuff it with half of the onion.
Tie the legs together and tuck the wings under the bird.
Rub the outside of the chicken with vegetable oil, then coat it with paprika, salt, and black pepper.
Place the chicken in a baking dish and drizzle a little more oil over the skin.
Roast for about 1 hour, then lower the temperature to 350°F (350°F) and continue roasting for another 15 minutes, or until the internal temperature reaches 167°F (165°F).
While the chicken rests, pour the pan drippings into a saucepan, discarding excess fat.
Add the chopped onion from the cavity to the pan and simmer until softened.
Stir in ketchup, hot pepper sauce, and steak sauce; cook briefly.
Mix cornstarch with a small amount of cold water to form a slurry, then whisk into the simmering sauce.
Add the remaining half‑cup of water, bring to a boil, and cook until the gravy thickens.
Carve the roasted chicken, serve with the hot gravy, and enjoy.
Tips while you cook
- Rest before carving
- Allow the roasted chicken to rest briefly before carving to retain juices.
- Prepare cornstarch slurry first
- Whisk cornstarch with a little cold water into a smooth slurry before adding it to the simmering sauce.
- Tie legs and tuck wings
- Tie the chicken legs together and tuck the wings under the bird to promote even cooking.
- Lower oven temperature after first hour
- After roasting for about 1 hour, reduce the oven temperature to finish cooking evenly.
