- 3Dice the sweet potato into 1‑cm cubes, halve the chestnut mushrooms, core and slice the red pepper, and mince the garlic cloves; grate the ginger using the thumb‑sized piece as a guide.
- 4In a large mixing bowl, combine the cubed sweet potato, halved mushrooms, sliced red pepper, and the pressed‑then‑cubed tofu. Drizzle with 1 tbsp olive oil, season generously with salt and freshly ground black pepper, and toss to coat evenly.
