15 minutes to prep, 10 to cook. Crispy fried green tomatoes are a Southern‑style snack that turns tart, unripe fruit into a golden, crunchy bite. The seasoned flour, panko, and parmesan coating gives them a satisfying texture, while the quick pan‑fry keeps them light and flavorful.

Method

  1. 1

Drain the canned green tomatoes (or slice fresh tomatoes) and soak them briefly in cold water.

  2. 2

In a shallow bowl combine the Kentucky Kernel flour, panko bread crumbs, and grated parmesan cheese; mix well.

  3. 3

Heat vegetable oil in a cast‑iron skillet over medium‑high heat until a wooden spoon handle placed in the oil begins to bubble around it, indicating the oil is about a quarter‑inch deep.

  4. 4

Remove each tomato slice from the water, pat dry, and coat thoroughly in the flour‑breadcrumb‑parmesan mixture.

  5. 5

Place the coated tomato slices in the hot oil, being careful not to overcrowd the pan.

  6. 6

Fry for about 2–3 minutes per side, or until golden brown and crispy, then transfer to a paper‑towel‑lined plate.

  7. 7

Repeat with remaining slices, adjusting heat as needed to maintain a steady fry.

  8. 8

Serve the fried green tomatoes hot, optionally with a horseradish cream sauce.

Tips while you cook

Dry before coating
Pat the tomato slices dry after removing them from the water before dredging.
Check oil temperature
Heat the oil until a wooden spoon handle placed in it begins to bubble around, indicating proper depth.
Avoid overcrowding
Place coated slices in the pan without crowding.
