Method

  1. 1

Combine brown sugar, vinegar, black ground pepper, oyster sauce, garlic, bay leaves, and onion in a bowl; mix well and marinate the pork for 1 hour.

  2. 2

Heat a pan over medium heat, add a little cooking oil, and add the marinated pork; cover and cook for 5 minutes.

  3. 3

Stir the pork, then cover and cook for another 10 minutes.

  4. 4

Add 2 cups of water to the pan, cover, and simmer until the pork becomes tender.

  5. 5

While the pork is simmering, heat oil in a separate pan and fry the potato wedges until browned and cooked through.

  6. 6

In the same pan, fry the sliced green bell pepper until slightly softened.

  7. 7

When the pork is nearly tender, stir in 4 tbsp soy sauce and mix.

  8. 8

Combine the fried potatoes and green bell pepper with the cooked pork, stir gently, and serve hot with rice.

Cover while cooking pork
Cover the pan during the initial 5‑minute cook and the subsequent 10‑minute cook.
Fry potatoes separately
Fry the potato wedges in a separate pan until browned and cooked through before mixing with the pork.
Add soy sauce near the end
Stir in the soy sauce when the pork is nearly tender, just before combining the vegetables.
