- 1Preheat the oven to 392°F (390°F) and lightly grease an oven‑proof dish.
- 2Place the salmon fillet in the dish, then scatter the halved cherry tomatoes and the washed spinach around it.
- 3Dot the salmon and vegetables with the light cream cheese, then season everything with salt, black pepper, and, if desired, a pinch of garlic granules and chilli flakes.
- 4Bake for 10–12 minutes, until the salmon is opaque and flakes easily with a fork.
- 5While the salmon bakes, bring a large pot of salted water to a boil and cook the tagliatelle according to the package directions, usually 7–9 minutes, until al dente.
- 6Reserve about ½ cup (120 ml) of the pasta cooking water, then drain the tagliatelle.
- 7Remove the baked salmon from the oven and, using two forks, flake it directly into the dish, mixing it with the melted cream cheese and softened tomatoes to create a creamy sauce.
- 8Add the cooked tagliatelle to the sauce, tossing gently. If the mixture looks dry, drizzle in a little of the reserved pasta water, a tablespoon at a time, until the pasta is glossy and fully coated.
- 9Taste and adjust seasoning with additional salt, black pepper, or extra chilli flakes if you like heat.
- 10Serve the salmon pasta immediately, optionally garnished with a sprinkle of fresh herbs such as parsley or chives.
