Ingredients
- chicken breast
- adobo seasoning
- black pepper
- salt
- smoked paprika
- garlic powder
- onion powder
- chili powder
- oregano
- red pepper flakes
- a drizzle olive oil
- 1 cup flour
- 3 eggs
- breadcrumbs
- lettuce
- Caesar dressing
- parmesan cheese
- submarine rolls
- butter
- garlic
- Italian seasoning
- parsley
- frying oil
- fries
- cajun seasoning
Instructions
- 1In a large bowl, combine the thinly sliced chicken breast with adobo seasoning, black pepper, salt, smoked paprika, garlic powder, onion powder, chili powder, oregano, and red pepper flakes; drizzle lightly with olive oil and toss to coat evenly. Let the seasoned chicken rest for 5 minutes.
- 2Set up a breading station: place flour in a shallow dish, whisk the eggs (3‑4) in a second shallow dish, and spread plain breadcrumbs in a third dish.
- 3Dredge each chicken slice in the flour, shaking off excess, then dip into the beaten eggs, and finally press into the breadcrumbs to create a uniform coating. Place the breaded pieces on a plate.
- 4Heat a skillet over medium‑high heat and add enough frying oil to reach about 1/2 inch depth (approximately 350°F/347°F). Once the oil shimmers, carefully add the breaded chicken slices.
- 5Fry the chicken for 3‑4 minutes per side, or until golden brown and the internal temperature reaches 165°F (165°F). Transfer to a paper‑towel‑lined plate to drain excess oil.
- 6While the chicken rests, melt butter in a clean pan over medium heat. Add minced fresh garlic, Italian seasoning, and chopped parsley; sauté for 1 minute until fragrant.
- 7Slice the submarine rolls lengthwise and place them cut side down in the butter‑garlic mixture. Toast for 2‑3 minutes until the bread is golden and has absorbed the butter flavor. Reserve a spoonful of the butter mixture for topping later.
- 8Spread a generous layer of Caesar dressing on the interior of each toasted roll.
- 9Assemble each sandwich: start with a bed of chopped lettuce, add two to three pieces of fried chicken, sprinkle freshly grated Parmesan cheese, and drizzle any remaining butter‑garlic mixture on top.
- 10Serve the sandwiches alongside seasoned steak fries tossed with cajun seasoning; optionally, add extra Parmesan or a squeeze of lemon to the fries.
