Method
Preheat the oven to 400°F.
Lightly coat a casserole dish with cooking spray.
Place the salmon fillet, cherry tomatoes, minced garlic, Italian seasoning, garlic powder, salt, and black pepper into the dish; crumble the light cream cheese over the top.
Bake for about 20 minutes, or until the salmon is cooked through and flakes easily.
While the salmon bakes, cook the protein pasta in salted boiling water according to package instructions until al dente; reserve a cup of pasta water, then drain.
Remove the cooked salmon from the skin, flake it into large pieces, and combine it with the baked tomato‑cream mixture.
Add the cooked pasta to the casserole, tossing gently to coat; if the sauce is thick, loosen it with reserved pasta water until desired consistency is reached.
Finish by stirring in fresh basil leaves, then serve immediately.
Tips while you cook
- Reserve pasta water
- Before draining, set aside a cup of pasta water to loosen the sauce if needed.
- Cream cheese placement
- Crumble the light cream cheese over the salmon and tomatoes before baking.
- Combine salmon after baking
- Flake the baked salmon and mix it into the tomato‑cream mixture before adding the pasta.
