Method

  1. 1

Let the steak come to room temperature, then pat dry with a paper towel. Coat it in olive oil and season evenly on all sides with salt, pepper, garlic powder, and ground coffee.

  2. 2

Heat a skillet over medium heat, add avocado oil, and once hot add the steak and the sliced onions. Season the onions with salt, pepper, and garlic powder, stirring every few minutes.

  3. 3

Cook the steak for 3–5 minutes per side to your desired doneness, then remove it from the pan and let it rest while you continue cooking the onions until softened.

  4. 4

In another skillet sprayed with avocado oil, cook the eggs over medium‑low heat until the whites are fully set.

  5. 5

While the eggs cook and the steak rests, combine avocado mayo, chipotle sauce, and honey in a bowl and mix until smooth to make honey chipotle mayo.

  6. 6

Slice the rested steak, then assemble the tortillas with steak slices, softened onions, cooked eggs, a drizzle of honey chipotle mayo, and garnish with EBTB seasoning and chopped cilantro. Serve immediately.

Tips while you cook

Room‑temperature steak
Allow the steak to come to room temperature before patting dry and seasoning.
Rest the steak
Let the cooked steak rest after removing it from the pan before slicing.
Use the same skillet for onions
Cook the sliced onions in the skillet after the steak is removed to retain flavor.
Gentle egg cooking
Cook the eggs over medium‑low heat.
