30 minutes to prep, 1 hour 30 minutes to cook. Char Siu is a classic Hong Kong‑style honey‑roasted pork that balances sweet, savory, and aromatic flavors. The pork is marinated in a rich blend of soy, hoisin, and five‑spice, then finished with a glossy maltose glaze, and served with fluffy jasmine rice and stir‑fried Chinese broccoli.

Method

Marinade

  1. 1

Combine brown sugar, fermented bean curd, oyster sauce, light soy sauce, dark soy sauce, hoisin sauce, Shaoxing rice wine, five‑spice powder, white pepper, and optional red food colouring; whisk until smooth.

  1. 2

Coat the pork shoulder with the marinade, cover, and let it marinate for at least 2 hours or overnight in the refrigerator.

  2. 3

Preheat the oven to 350°F (350°F). Place the marinated pork on a rack over a tray and roast for about 60 minutes.

Honey baste

  1. 4

Mix maltose, MSG, and water until the maltose dissolves.

  1. 5

During the last 15 minutes of roasting, brush the pork with the honey baste every 5 minutes, allowing it to caramelize and develop a glossy, charred surface.

  2. 6

Remove the pork, let it rest for 10 minutes, then slice and serve with jasmine rice and a side of gai lan or Chinese cabbage.

Tips while you cook

Preheat oven fully
Preheat the oven to 180 °C before placing the pork inside.
