20 minutes to prep, 52 to cook. A hearty traybake that blends sweet apple, creamy butter beans, and golden halloumi glazed with honey. Roasted butternut squash and spiced onions add depth, while a tangy lemon yoghurt drizzle provides a fresh finish, making it a satisfying high‑protein vegetarian dinner.

Method

  1. 1

Preheat the oven to 400°F fan.

  2. 2

In a large roasting tray, combine the butternut squash chunks, red onion wedges, olive oil, thyme sprigs, chilli flakes, salt and black pepper; toss to coat and spread evenly. Roast for about 25 minutes, or until the edges begin to caramelise.

  3. 3

Add the apple pieces, butter beans and chopped garlic to the tray, drizzle the cider vinegar over everything, give a quick toss, and continue roasting for another 15 minutes.

  4. 4

Arrange the halloumi slabs on top of the vegetables, drizzle the runny honey over the halloumi, scatter the pumpkin seeds around, and bake for 10–12 minutes, until the halloumi is golden and sticky.

  5. 5

While the traybake finishes, whisk together the Greek yoghurt, lemon juice and a pinch of salt to make a lemon yoghurt sauce.

  6. 6

Serve the traybake with dollops of the lemon yoghurt sauce, a grind of black pepper, and enjoy.
