15 minutes to prep, 20 to cook. These hearty Breakfast Haystacks turn leftover potatoes, veggies, and meat into a satisfying morning meal. Crispy shredded potatoes form a base, topped with sautéed onions, peppers, and ham, then crowned with a perfectly fried egg and a sprinkle of fresh parsley.

Method

  1. 1

Chop the onion and bell pepper.

  2. 2

    Shred the potato.

  3. 3

Cut the ham (or sausage/bacon) into small pieces.

  4. 4

Heat a pan, add the shredded potatoes, shape into slices, make a small well in each, and add 1/4 teaspoon of oil; season with salt and pepper and brown on one side.

  5. 5

Flip the potato slices and brown the other side.

  6. 6

In the same pan, add another 1/4 teaspoon of oil and sauté the chopped onion and pepper until softened.

  7. 7

Add the ham pieces and brown them.

  8. 8

In a separate skillet, fry the eggs (or scramble if preferred), seasoning with salt, pepper, and a splash of water, then cover and cook until done.

  9. 9

Assemble the haystacks: place the hash brown slices on a plate, top with the cooked veggies and ham, then place the fried egg on top.

  10. 10

Garnish with a pinch of chopped parsley and serve.
