Method
Cookie
Preheat the oven to 350°F (325°F fan) / gas mark 4 and line a baking tray with parchment paper.
Cream the butter and both sugars together until light and fluffy.
Beat in the egg and vanilla extract.
Sift in the flour, bicarbonate of soda, and salt; mix until just combined into a soft dough.
Fold in the dark chocolate chunks gently until evenly distributed.
Shape the dough into 10 equal balls, place on the prepared sheet, and bake for 10–12 minutes until edges are lightly golden and centers remain soft.
Let cool on the sheet for a few minutes before transferring to a rack.
Vanilla Cake
Heat oven to 350°F (350°F), grease an 8‑inch pan and line with baking paper.
In a bowl, whisk together flour, baking powder, and a pinch of salt.
In another bowl, beat sugar and eggs for 2–3 minutes until light, then add melted butter (or oil), milk, and vanilla; mix well.
Combine wet and dry mixtures, stirring just until smooth; avoid overmixing.
Pour batter into the pan, tap once to release bubbles, and bake for 30–35 minutes until a toothpick comes out clean.
Cool 15 minutes in the pan, then remove to a rack to finish cooling.
Spaghetti Bolognese
Heat oil in a large pot over medium‑high heat, add ground beef (or sausage) and brown for about 8 minutes, breaking into crumbles.
Add chopped onion and cook until softened, about 5 minutes; stir in garlic, tomato paste, oregano, and red pepper flakes for 1 minute.
Deglaze with a splash of water or broth, then add crushed tomatoes, salt, and black pepper; simmer uncovered for 25 minutes.
Meanwhile, boil salted water and cook spaghetti until al dente, about 8–12 minutes; do not rinse.
Stir fresh basil into the sauce, toss the cooked spaghetti directly into the sauce, let sit briefly, and serve topped with Parmesan.
Hibiscus Juice
Collect hibiscus flowers, peel and wash them, then blend with a little water.
Add sugar, lemon juice, and ice cubes to taste; blend again and serve chilled.
Shredded Potato Egg Scramble: Cut potatoes into long thin strips and fry in hot oil until crisp.
Shredded Potato Egg Scramble: Beat two eggs in a bowl, then pour over the fried potatoes and scramble together.
Shredded Potato Egg Scramble: Optional – sprinkle shredded seaweed on top before serving.
