Steamed Buns with Korean Chicken
Steamed buns with Korean chicken, served with a side of braising liquid and toasted sesame seeds.

Ingredients
- 2 Ginger
- 2 tbsp Soy sauce
- 3 tbsp gochujang
- 2 tbsp Vegetable oil
- 11 oz Chicken thighs
- 2 tbsp Sesame seeds
- 2 Scallions
- 0.53 oz Fresh cilantro
- 8 4/5 oz Self-raising flour
- 1 tsp Salt
- 1 tsp Baking powder
- 0.85 cup Milk
- 2 tbsp Sesame oil
Instructions
- Preheat the oven to 200°C.
- Grate the ginger and mix it with soy sauce, Korean chili sauce, and vegetable oil in a bowl.
- Add the chicken to the bowl and marinate for 15 minutes.
- Toast the sesame seeds in a pan without oil or butter for 3 minutes.
- Slice the scallions and chop the cilantro.
- Roast the chicken in the oven for 25 minutes, flipping it halfway through.
- Mix the self-raising flour, salt, baking powder, and milk in a bowl to form a dough.
- Knead the dough for 5 minutes and divide it into 12 balls.
- Roll out each ball into an oval shape and brush with sesame oil.
- Fold the dough in half and place it in a steamer basket lined with parchment paper.
- Steam the buns for 10 minutes, then repeat with the remaining dough.
- Slice the cooked chicken and mix it with the toasted sesame seeds and braising liquid.
- Serve the chicken, cilantro, scallions, and buns on a plate and let everyone assemble their own bun.
