Steamed Buns with Korean Chicken

Ingredients

  • 2 Ginger
  • 2 tbsp Soy sauce
  • 3 tbsp gochujang
  • 2 tbsp Vegetable oil
  • 11 oz Chicken thighs
  • 2 tbsp Sesame seeds
  • 2 Scallions
  • 0.53 oz Fresh cilantro
  • 8 4/5 oz Self-raising flour
  • 1 tsp Salt
  • 1 tsp Baking powder
  • 0.85 cup Milk
  • 2 tbsp Sesame oil

Instructions

  1. Preheat the oven to 200°C.
  2. Grate the ginger and mix it with soy sauce, Korean chili sauce, and vegetable oil in a bowl.
  3. Add the chicken to the bowl and marinate for 15 minutes.
  4. Toast the sesame seeds in a pan without oil or butter for 3 minutes.
  5. Slice the scallions and chop the cilantro.
  6. Roast the chicken in the oven for 25 minutes, flipping it halfway through.
  7. Mix the self-raising flour, salt, baking powder, and milk in a bowl to form a dough.
  8. Knead the dough for 5 minutes and divide it into 12 balls.
  9. Roll out each ball into an oval shape and brush with sesame oil.
  10. Fold the dough in half and place it in a steamer basket lined with parchment paper.
  11. Steam the buns for 10 minutes, then repeat with the remaining dough.
  12. Slice the cooked chicken and mix it with the toasted sesame seeds and braising liquid.
  13. Serve the chicken, cilantro, scallions, and buns on a plate and let everyone assemble their own bun.
