Steamed Buns with BBQ Grilled Steak and Sriracha Mayo

Ingredients
- 1 Red onion
- 0.5 Cucumber
- 0.42 cup Vinegar
- 0.42 cup Water
- 1 1/2 tbsp Crystallized sugar
- 0.85 cup Half-and-half
- 11 oz Bread flour
- 0.14 oz Dried yeast
- 1 tsp Baking powder
- 1/2 tsp Salt
- 9 1/2 oz Beef steak
- 0.53 oz Fresh cilantro
- 1 tbsp Sesame seeds
- 4 tbsp Sriracha mayo
Instructions
- Slice the red onion and cucumber into thin half-rings and place them together in a bowl.
- Heat the vinegar, water, and sugar in a saucepan until the sugar dissolves and pour it over the cucumber and onion. Let it sit until ready to use.
- Heat the milk in a saucepan until it's lukewarm. Mix the flour, yeast, baking powder, sugar, and salt in a stand mixer.
- Add the milk to the mixer while mixing and knead for 15-20 minutes with the dough hook attachment on the lowest speed until a smooth, elastic dough forms.
- Shape the dough into a roll and cut it into 12 equal pieces. Roll each piece out into an oval shape of about 12 x 8 cm, brush with a little oil, and fold in half.
- Make 11 more. Let them rise for 30-45 minutes in a warm, draft-free place until the dough slowly returns to its original shape when pressed.
- Place the steamer basket over a pan with 4 cm of water. Cut 3-4 pieces of baking paper into 12 x 12 cm squares and place them on the bottom of the steamer basket.
- Add 3-4 buns to the steamer basket and cover it with a lid. Bring the water to a boil and steam the buns for 10 minutes.
- Remove from heat and let rest for 3 minutes. Repeat with the remaining buns.
- Meanwhile, heat the barbecue.
- Grill the beef steak for about 4 minutes on the barbecue. Flip halfway through. Slice the steak into strips and chop the cilantro.
- Place the steak, pickled red onion, cucumber, cilantro, sesame seeds, and sriracha mayo on the table so everyone can assemble their own bun.
