Ingredients
- 2 cup oats
- 2 eggs
- 1/2 cup Greek yogurt
- 1 banana
- 1 handful baby spinach
- 1/4 cup olive oil
- 2 tsp vanilla extract
- 2 tbsp maple syrup
- 1 tsp cinnamon
- 1 tsp baking powder
- 1/2 tsp baking soda
- a pinch salt
- 2 tbsp chia seeds
Instructions
- Preheat the oven to 350 degrees Fahrenheit. Line or grease a muffin tin to prevent the muffins from sticking.
- In a blender, combine all the ingredients and blend until smooth. This may require stopping the blender and scraping down the sides a few times to ensure everything is well mixed.
- Pour the blended mixture into the prepared muffin cups, filling them about 3/4 of the way full.
- For mini muffins, bake for 13-15 minutes. For regular-sized muffins, bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Remove the muffins from the oven and let them cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
- Once the muffins are cool, they are ready to serve. You can store them in an airtight container in the refrigerator for up to 5 days or freeze them for up to 2 months.
- To freeze, place the cooled muffins in a single layer in a freezer-safe bag or container. When you're ready to eat one, simply thaw it at room temperature or reheat it in the microwave.
