Ingredients

  • 1 medium zucchini
  • 1 egg egg wash
  • 1 cup breadcrumbs
  • 1/2 cup almond flour
  • 1/2 cup parmesan cheese
  • 2 tablespoon nutritional yeast
  • 1 teaspoon italian seasoning
  • to taste null salt
  • to taste null pepper
  • for spraying null EVOO (Extra Virgin Olive Oil)
  • for serving null yogurt ranch dip
  • for serving null marinara sauce

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Cut the zucchinis into thin slices, about 1/4 inch thick. Pat the slices dry with a paper towel to remove excess moisture.
  3. In a shallow dish, mix together the breadcrumbs, almond flour, parmesan cheese, nutritional yeast, and Italian seasoning.
  4. In a separate dish, beat the egg wash or prepare a bowl of water for spraying with oil.
  5. Dip each zucchini slice into the egg wash or spray with oil, coating both sides, then coat in the breadcrumb mixture, pressing gently to adhere.
  6. Place the coated zucchini slices on a baking sheet lined with parchment paper. Spray with a little EVOO if desired.
  7. Bake the zucchini slices in the preheated oven for 20-25 minutes, flipping them halfway through, until they are crispy and golden brown.
  8. While the zucchini is baking, prepare your child's favorite dip, such as yogurt ranch dip or marinara sauce.
  9. Once the zucchini is done, remove it from the oven and let it cool for a few minutes.
  10. Serve the crispy zucchini slices with the chosen dip and enjoy!
  11. Encourage your toddler to participate in the cooking process, such as helping with the coating or mixing the breadcrumb mixture. This can help develop their autonomy and interest in cooking.
