Ingredients

  • 1 iceberg lettuce
  • 1 cup salami
  • 1 can chickpeas
  • 1 cup mozzarella cheese
  • 1/4 cup pepperoncinis
  • 1 red onion
  • 1/4 cup red wine vinegar
  • 1/3 cup olive oil
  • 2 tsp Dijon mustard
  • 1 clove garlic
  • 1 tsp oregano
  • 1 tbsp pepperoncini juice
  • to taste salt and black pepper
  • 1/4 cup Parmesan cheese

Instructions

  1. Begin by preparing the ingredients: thinly slice the iceberg lettuce, slice the salami, drain and rinse the chickpeas, and chop the pepperoncini.
  2. In a large bowl, combine the sliced lettuce, salami, chickpeas, mozzarella cheese, chopped pepperoncini, and super thinly sliced red onion.
  3. In a separate bowl, whisk together the red wine vinegar, olive oil, Dijon mustard, finely grated garlic, and oregano until well combined.
  4. Add the pepperoncini juice to the dressing and whisk until smooth.
  5. Pour the dressing over the salad and toss thoroughly to coat all the ingredients.
  6. Season the salad with salt and black pepper to taste.
  7. Sprinkle the finely grated Parmesan cheese over the salad and toss again to combine.
  8. Let the salad sit for about 10 minutes to allow the flavors to meld together.
