Ingredients
- 1 iceberg lettuce
- 1 cup salami
- 1 can chickpeas
- 1 cup mozzarella cheese
- 1/4 cup pepperoncinis
- 1 red onion
- 1/4 cup red wine vinegar
- 1/3 cup olive oil
- 2 tsp Dijon mustard
- 1 clove garlic
- 1 tsp oregano
- 1 tbsp pepperoncini juice

- 1/4 cup Parmesan cheese
Instructions
- Begin by preparing the ingredients: thinly slice the iceberg lettuce, slice the salami, drain and rinse the chickpeas, and chop the pepperoncini.
- In a large bowl, combine the sliced lettuce, salami, chickpeas, mozzarella cheese, chopped pepperoncini, and super thinly sliced red onion.
- In a separate bowl, whisk together the red wine vinegar, olive oil, Dijon mustard, finely grated garlic, and oregano until well combined.
- Add the pepperoncini juice to the dressing and whisk until smooth.
- Pour the dressing over the salad and toss thoroughly to coat all the ingredients.
- Season the salad with salt and black pepper to taste.
- Sprinkle the finely grated Parmesan cheese over the salad and toss again to combine.
- Let the salad sit for about 10 minutes to allow the flavors to meld together.
